A beloved Tunisian street-food specialty, featuring soft, yeasted oblong buns deep-fried until puffed and golden brown, sliced open, and stuffed with fiery harissa, tuna, boiled potatoes, hard-boiled eggs, capers, and black olives.

Ingredients

What you’ll need

  • Dough
  • 500g (approx. 4 cups) all-purpose flour
  • 1 sachet (7g or 2.25 tsp) active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 egg
  • 1 tbsp olive oil
  • 1 cup warm water (approx. 110°F / 43°C)
  • Fillings
  • 1 can (5 oz) high-quality tuna in olive oil (drained, flaked)
  • 2 medium potatoes (boiled, peeled, cubed)
  • 3 hard-boiled eggs (sliced)
  • 1/4 cup black olives (pitted, sliced)
  • 2 tbsp capers (rinsed)
  • 3-4 tbsp harissa paste
  • Frying
  • 4 cups vegetable oil

Method

How it comes together

    Dissolve yeast and sugar in 1/4 cup warm water. Let sit for 5 minutes. In a bowl, mix flour and salt. Add yeast mixture, egg, olive oil, and remaining warm water. Knead for 8-10 minutes until smooth and soft.

    Place dough in a greased bowl, cover, and let rise for 1 hour in a warm place until doubled.

    Punch down, divide into 12 portions, and shape into oval buns. Place on a sheet, cover, and let rise for another 30 minutes.

    Heat vegetable oil in a deep skillet to 350°F (175°C).

    Gently fry buns for 2 to 3 minutes per side until puffed and golden. Drain on paper towels and let cool.

    Slice open each bun lengthwise. Spread harissa inside, and fill with cubed potatoes, flaked tuna, sliced eggs, black olives, and capers.

Accuracy note

Fricassé is a fried bun, not a baguette sandwich and not the French stewing method of the same name.

Chef’s note

Frying the dough at exactly 350°F prevents the outside from browning too quickly while keeping the inside raw.
