Matbucha Cooked Salad
Moroccan slow-cooked sweet and savory "cooked salad" or dip made of roasted bell peppers, tomatoes, and sweet garlic.
Ingredients
What you’ll need
- 4 bell peppers (roasted, peeled, chopped)
- 8 ripe tomatoes (peeled, chopped)
- 6 cloves garlic (minced)
- 1 tsp sweet paprika
- 1/2 tsp cayenne
- 1/3 cup extra virgin olive oil
- 1 tsp salt
- 1 tsp sugar
Method
How it comes together

Roast bell peppers at 400°F (200°C) for 20 minutes until charred. Place in a bag to steam, peel, and chop.

Sauté minced garlic in olive oil in a skillet over medium heat (350°F / 175°C) for 1 minute. Add tomatoes, paprika, cayenne, salt, and sugar.

Simmer on low for 1 hour, mashing occasionally, until tomatoes break down.

Add chopped roasted peppers. Simmer uncovered on low for another 30 minutes until thick and jam-like with no excess liquid. Let cool and serve.
Accuracy note
Matbucha is cooked down far beyond an ordinary tomato salad; concentration is its defining technique.

Patient slow-simmering is vital to sweeten the garlic and thicken the tomatoes into a rich spread.
