Filfel Chuma
A robust Libyan-Jewish red chili and garlic paste, deeply spiced with caraway and cumin, and slow-simmered in oil to develop a smooth, fragrant heat.
Ingredients
What you’ll need
- 15 dried red chilies (sweet paprika and hot cayenne)
- 10 cloves garlic (peeled)
- 1.5 tbsp ground cumin
- 1.5 tbsp ground caraway
- 1 tsp sweet paprika
- 1 tsp salt
- 1/2 cup extra virgin olive oil
Method
How it comes together

Rehydrate dried chilies in boiling water for 25 minutes. Drain thoroughly.

In a food processor, blend the rehydrated chilies and raw garlic cloves into a smooth, coarse paste.

Stir in ground cumin, caraway, paprika, salt, and slowly drizzle in olive oil until a glossy, thick paste forms.

Place in a pan and heat gently on low (180°F / 82°C) for 10 minutes to sweeten the garlic and meld flavors. Store in a jar topped with olive oil.
Safety note
Traditional families may preserve it longer under oil, but an oil cap does not eliminate botulism risk in a low-oxygen garlic mixture.
Chef’s note
Filfel Chuma has a much higher garlic-to-chili ratio than Moroccan harissa, giving it a distinctive sharp punch.
