What you’ll need

  • 3 large green bell peppers
  • 2 hot green chilies
  • 4 plum tomatoes
  • 1 onion
  • 1 whole bulb of garlic
  • 1/3 cup extra virgin olive oil
  • 1.5 tsp ground caraway seeds
  • salt
  • 1 can tuna (drained)
  • 2 hard-boiled eggs (quartered) for garnish

Method

How it comes together

    Grill peppers, tomatoes, onion, and whole garlic bulb on an outdoor grill or under an oven broiler on high (425°F / 218°C) for 15-20 minutes until skins are completely black and blistered.

    Place grilled vegetables in a bowl, cover with foil, and let steam for 10 minutes (this makes peeling easy).

    Peel the blackened skins off. Coarsely chop tomatoes, peppers, onion, and squeeze the garlic out of its cloves.

    Place chopped vegetables in a bowl. Season with ground caraway, olive oil, and salt. Garnish with flaked tuna and hard-boiled eggs.

Accuracy note

Do not rinse charred peppers under water; rinsing washes away smoky flavor.

Chef’s note

Slat Mechouia is traditionally chopped coarsely with a double-handled knife (hachoir) rather than blended, to maintain its rustic texture.
