Pickled Wild Cardoon

Cardoon stalks (kharchouf) peeled, parboiled in lemon water, and slow-cured in a zesty sea salt-garlic brine.

What you’ll need

  • 2 lbs wild cardoon stalks (kharchouf)
  • 4 cloves garlic
  • 1 tbsp coriander seeds
  • 1.5 cups white vinegar
  • 3 cups water
  • 3 tbsp coarse salt
  • 2 lemons (sliced)

Method

How it comes together

    Wearing gloves, pull off stringy ribs from cardoon stalks. Cut into 3-inch logs.

    Boil cardoons in salted water with juice of 1 lemon for 20 minutes until tender. Drain.

    Pack cardoon logs, garlic cloves, coriander seeds, and lemon slices tightly into sterilized jars.

    Bring water, white vinegar, and coarse salt to a boil. Cool slightly, then pour over cardoons to submerge. Seal tightly.

    Let cure in a cool dark cupboard for 2 weeks before serving.

This is a refrigerator pickle, not a shelf-stable canning recipe. Never pickle a foraged plant unless positively identified by a qualified expert.

Boiling cardoons in lemon water before pickling preserves their pale color and strips away their bitter sap.
