Karantita
A savory Algerian chickpea-flour flan or gratin, flavored with cumin, baked until custardy on the inside with a beautifully browned top crust, and served hot inside a baguette with harissa.
Ingredients
What you’ll need
- 250g (approx. 2 cups) chickpea flour
- 1 liter (approx. 4 cups) cold water
- 1/2 cup whole milk
- 1/3 cup vegetable oil
- 1 large egg
- 1.5 tsp salt
- 1.5 tsp ground cumin (divided)
- 1/2 tsp black pepper
- Harissa paste and fresh baguettes for serving
Method
How it comes together

Preheat oven to 400°F (200°C). Grease a deep 9x13-inch baking dish with oil.

In a large bowl, whisk chickpea flour, water, milk, vegetable oil, egg, salt, 1 tsp cumin, and black pepper until completely smooth and lump-free (the batter will be very thin, like milk).

Let the batter rest for 15 minutes.

Stir batter once more, pour into greased dish, and bake on the middle rack at 400°F (200°C) for 30 to 35 minutes.

Turn oven to broil for the final 5 minutes until a deep golden-brown crust forms on top (the center should still be slightly jiggly).

Remove from oven, dust with remaining 1/2 tsp cumin, let cool for 5 minutes, and serve hot inside a split baguette smeared with harissa.
Accuracy note
Texture should be tender and custardy, not dry like cornbread. Eggless versions are also traditional.
Chef’s note
Adding a touch of milk and egg creates a much creamier, soufflé-like interior compared to traditional water-only recipes.
