Saffron Threads M’qualli
The traditional Moroccan chef's infusion technique used to activate and maximize the golden color and aroma of saffron threads before cooking.
Ingredients
What you’ll need
- 1 tsp whole saffron threads
- 1/2 cup hot water (or light chicken broth)
- 1 pinch of salt
Method
How it comes together

Place the whole saffron threads in a small dry skillet over low heat (approx. 250°F / 120°C) for exactly 10 to 15 seconds until dry and fragile (do not let them burn or turn black).

Transfer the warm threads to a small mortar or between your fingertips. Add a pinch of salt (or sugar) and grind the brittle threads into a fine powder.

Pour 1/2 cup of hot water (approx. 180°F / 82°C) over the saffron powder.

Let the infusion steep at room temperature for 15 minutes. The water will turn a glowing, deep red-orange. Use this liquid to marinate chicken or beef for M'qualli tagines.
Accuracy note
Saffron is one element of m’qualli, whose defining features also include the braising medium and reduced onion sauce. This mixture is not a shelf-stable paste.
Chef’s note
Heating the saffron dry makes it brittle and easy to grind, while steeping activates its coloring and flavoring power.
