What you’ll need

  • 1 large eggplant (1 lb)
  • 3 large tomatoes (peeled and chopped)
  • 4 cloves garlic (minced)
  • 1/4 cup fresh cilantro and parsley (chopped)
  • 1 tsp cumin
  • 1.5 tsp paprika
  • 1 tsp salt
  • 1/4 cup extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 baguette

Method

How it comes together

    Roast: Roast eggplant whole at 400°F (200°C) for 30-40 minutes until soft. Peel and chop.

    Sauce: Sauté tomatoes, garlic, cumin, paprika, salt, and herbs in olive oil over medium-high (350°F / 175°C) for 10 minutes until soft.

    Mash & Cook: Add eggplant. Mash with a potato masher. Simmer on medium-low for 15 minutes until thick. Stir in lemon juice.

    Assemble: Spread warm inside a sliced, toasted baguette.

Accuracy note

Zaalouk should be concentrated, not watery. Charred eggplant gives a smokier regional variation; boiling or roasting is also traditional.
