  • 2 cups flour
  • 1 cup fine semolina
  • 1 tsp salt
  • 1.5 tsp yeast
  • 1.25 cups warm water
  • 1 tbsp olive oil
  • Filling
  • 1 lb ground beef
  • 1 small onion (chopped)
  • 1 tsp cumin
  • 1 tsp paprika
  • salt, pepper
  • lettuce, tomato slices
  • mayonnaise

Method

How it comes together

    Dough: Knead flour, semolina, salt, yeast, olive oil, and water for 10 minutes. Rest for 45 minutes.

    Shape: Roll to 1/4-inch thickness. Cut out small 3-inch rounds. Let rise for 20 minutes.

    Cook: Cook on a dry griddle over medium heat (375°F / 190°C) for 2 minutes per side until puffed.

    Filling: Sauté onion and ground beef with spices at 350°F (175°C) for 10 minutes.

    Assemble: Split mini pita open, stuff with lettuce, tomato, meat filling, and mayonnaise.

Accuracy note

Frequent turning encourages an even pocket. Batbout is pan-cooked rather than baked like standard khobz.
