  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 4 cups vegetable oil
  • 1 lemon (cut into wedges)

    Prep: Rinse whitebait and pat completely dry with paper towels (moisture prevents crispiness).

    Coat: Whisk flour, salt, pepper, garlic powder, and cayenne in a large bowl. Toss whitebait to coat. Shake off excess flour.
