Fried Whitebait Cornet
Whole silver whitebait fish tossed in seasoned flour, deep-fried until extremely crispy, dusted with sea salt, and served piping hot inside a paper cone (cornet) with a fresh lemon wedge.

- 1 lb whole whitebait fish (thawed and dried)
- 1.5 cups plain flour
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp cayenne pepper
- 4 cups vegetable oil
- 1 lemon (cut into wedges)

Prep: Rinse whitebait and pat completely dry with paper towels (moisture prevents crispiness).

Coat: Whisk flour, salt, pepper, garlic powder, and cayenne in a large bowl. Toss whitebait to coat. Shake off excess flour.

Fry: Heat oil to 375°F (190°C) and deep fry whitebait in small batches for exactly 2 minutes until golden-brown and crispy.

Serve: Drain, sprinkle with sea salt, and serve hot inside a paper cone with lemon wedges.
Accuracy note
Small fish are often eaten whole after gutting if necessary. Do not pile or cover after frying; trapped steam destroys crispness.
