What you’ll need

  • 1/2 lb beef (cubed)
  • 1 cup lentils
  • 1 can chickpeas
  • 1 onion (grated)
  • 1 cup celery (diced)
  • 1/2 cup fresh cilantro/parsley (chopped)
  • 1 can crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp ginger
  • 1 tsp turmeric
  • 1 cinnamon stick
  • salt, pepper
  • 1/2 cup vermicelli noodles
  • 3 tbsp flour (whisked with 1 cup water)

Method

How it comes together

    Sauté: Sauté beef, onion, celery, and herbs in 1 tbsp oil on medium-high (350°F / 175°C) for 5 minutes.

    Simmer: Add crushed tomatoes, tomato paste, lentils, ginger, turmeric, cinnamon stick, salt, pepper, and 6 cups water. Simmer on low (190°F / 88°C) for 50 minutes.

    Cook Noodles: Add chickpeas and vermicelli noodles. Cook for 10 minutes.

    Thicken: Pour in flour-water slurry. Simmer on low for 10 minutes until thick and silky. Serve hot in a cup.

Accuracy note

The cup is only a serving format. Harira’s recognizable structure is tomato, pulses, herbs, warming spices, noodles or rice, and a flour-based thickener called tedouira.
