Mombar Rice Sausage
Egyptian celebratory dish of sheep or beef casings stuffed with a raw filling of rice, tomatoes, onions, garlic, and fresh herbs, boiled tender, and deep-fried until golden and crispy.
Ingredients
What you’ll need
- 1 lb cleaned sheep casings
- 2 cups Egyptian rice
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 2 cups tomato puree
- 1 cup fresh dill/parsley/cilantro (chopped)
- 1 tsp cumin
- 1 tsp coriander
- salt, pepper
- 4 cups vegetable oil
Method
How it comes together

Stuff: Mix raw rice, onion, garlic, tomato puree, herbs, and spices. Stuff loose and flat into 8-inch casings (do not overstuff).

Boil: Simmer mombar in rolling salted water (200°F / 93°C) for 35-40 minutes until rice is tender. Drain and dry completely.

Fry: Heat oil to 375°F (190°C) and deep fry sausages for 5-6 minutes until crispy and dark golden.
Safety note
Keep casings cold and sanitary. Overfilling can burst links; vigorous boiling can also split them.
