Douara Offal Skewers
Traditional Moroccan Eid celebratory dish of sheep tripe, lung, and heart thoroughly cleaned, boiled tender, seasoned with cumin and garlic, skewered, and grilled.
Ingredients
What you’ll need
- 1 lb lamb tripe/offal (cleaned)
- 4 cloves garlic (minced)
- 1 tbsp ground cumin
- 1 tsp paprika
- 1 tsp coriander
- salt, pepper
- 2 tbsp olive oil
Method
How it comes together

Clean: Scrub tripe with salt and vinegar. Boil in salted water with lemon for 30 minutes. Cut into squares.

Marinate: Toss offal with olive oil, garlic, cumin, paprika, coriander, salt, and pepper. Let marinate for 20 minutes.

Grill: Thread onto skewers. Grill on high (400°F / 200°C) for 4 to 5 minutes per side until charred.
Safety note
Source offal from a regulated butcher, prevent cross-contamination, and use a thermometer where practical. This is not the standard stewed douara preparation.
