Sardine Chermoula Roll
Fresh, crispy fried sardine fillets marinated in a zesty garlic-and-herb Chermoula sauce, rolled up tightly in a warm flatbread wrap.

- 1 lb butterflied sardines
- 1/2 cup Chermoula sauce (cilantro, parsley, garlic, lemon, olive oil, cumin, paprika, salt)
- 1 cup flour
- vegetable oil
- 4 soft flatbread wraps
- tomato and onion slices
Method
How it comes together

Stuff: Coat butterflied sardines inside with Chermoula paste. Sandwich them in pairs.

Fry: Dredge in flour. Fry in hot oil (375°F / 190°C) for 2 to 3 minutes per side until crispy.

Assemble: Wrap in warm flatbread with fresh tomatoes, onions, and extra chermoula.
Accuracy note
Sardines and chermoula are traditional; the bread-roll construction is a practical contemporary street-food treatment.
