What you’ll need

  • 1 lb butterflied sardines
  • 1/2 cup Chermoula sauce (cilantro, parsley, garlic, lemon, olive oil, cumin, paprika, salt)
  • 1 cup flour
  • vegetable oil
  • 4 soft flatbread wraps
  • tomato and onion slices

Method

How it comes together

  1. 1

Stuff: Coat butterflied sardines inside with Chermoula paste. Sandwich them in pairs.

  2. 2

Fry: Dredge in flour. Fry in hot oil (375°F / 190°C) for 2 to 3 minutes per side until crispy.

  3. 3

Assemble: Wrap in warm flatbread with fresh tomatoes, onions, and extra chermoula.

Accuracy note

Sardines and chermoula are traditional; the bread-roll construction is a practical contemporary street-food treatment.
