Roasted Chestnut Cone
Sweet whole chestnuts scored and roasted over hot embers until soft, tender, and fragrant, served hot in paper cones with sea salt.

- 1 tsp sea salt
Method
How it comes together

Score: Score a deep "X" on the flat side of each chestnut shell to prevent bursting.

Roast: Roast on a baking sheet at 425°F (218°C) or over hot coals on a grill for 20-25 minutes until shells peel back.

Serve: Wrap hot chestnuts in a towel for 5 minutes to steam. Peel and serve with sea salt.
Accuracy note
Discard chestnuts that smell sour, show mold, or remain hard and shriveled after roasting. Street vendors may roast over charcoal or in perforated drums for smokier flavor.
