Lamb M’hammar
Celebratory Moroccan feast dish of tender lamb slow-braised with onions, smen, ginger, and saffron, then roasted in a hot oven until crispy and caramelized.
Ingredients
What you’ll need
- 3 lbs bone-in lamb shanks or shoulder
- 3 large onions (chopped)
- 4 cloves garlic (minced)
- 1 tbsp ginger
- 1 tbsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- pinch of saffron
- 2 tbsp smen (aged butter) or butter
- salt, pepper
Method
How it comes together

Simmer: Combine lamb, onions, garlic, spices, smen, and 4 cups water. Simmer covered on low (190°F / 88°C) for 2 to 2.5 hours until tender.

Roast: Transfer lamb to a baking dish, brush with butter, and roast at 425°F (218°C) for 15-20 minutes until deeply caramelized.

Serve: Reduce remaining broth into a thick caramelized gravy and pour over the roasted lamb.
Accuracy note
M’hammar is a technique family, not one fixed seasoning formula. The defining sequence is moist cooking followed by pronounced browning.
