Kefta Mkaouara
Comforting Moroccan tagine of spiced beef meatballs simmered in a garlic-tomato sauce, finished with fresh eggs poached in the sauce before serving.
Ingredients
What you’ll need
- Kefta
- 1 lb ground beef
- 1 small onion (grated)
- 1/4 cup cilantro (chopped)
- 1 tsp cumin
- 1 tsp paprika
- salt, pepper
- Sauce
- 1 can (28 oz) crushed tomatoes
- 3 cloves garlic (minced)
- 1 tsp cumin
- 1 tsp paprika
- 2 tbsp olive oil
- 4 eggs

How it comes together

Meatballs: Combine ground beef, grated onion, cilantro, and spices. Shape into bite-sized balls.

Sauce: Sauté garlic in olive oil on medium (350°F / 175°C) for 1 minute. Add tomatoes and spices. Simmer for 10 minutes.

Cook: Add meatballs. Cover and simmer on medium-low for 15 minutes.

Poach Eggs: Crack eggs into 4 small wells in the sauce. Cover and poach for 5 to 6 minutes until set but yolks are runny.
Accuracy note
Breadcrumbs are unnecessary in the compact, small Moroccan kefta used here. Eggs are common but optional.
