Djej Bil Zaytoun
Algeria and Tunisia; “chicken with olives,” made in several white, saffron, or tomato-tinged regional styles. This is a light Algerian-style version.
Ingredients
What you’ll need
- 3 lb/1.35 kg bone-in chicken pieces
- 1 1/2 tsp salt
- 1 tsp ginger
- 1/2 tsp black pepper
- 1/2 tsp turmeric
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 carrots, cut into thick coins, optional
- 2 cups/475 ml chicken stock
- 1 cup/150 g green olives
- 1 tbsp flour mixed with 2 tbsp water, optional
- 2 tbsp chopped parsley
- Juice of 1/2 lemon
Method
How it comes together

Season chicken with salt, ginger, pepper, and turmeric. Brown lightly in olive oil; remove.

Soften onion and garlic. Add carrots, stock, and chicken. Cover and simmer until tender and 165°F/74°C, 35-45 minutes.

Blanch olives in fresh water for 5 minutes if very salty. Add to the pot for the final 15 minutes.

Thicken lightly with flour slurry only if needed. Finish with parsley and lemon juice.
Accuracy note
Olive salinity varies dramatically. Rinsing or blanching prevents an over-salted sauce.
