Mrouzia Honey Lamb
Morocco; Eid al-Adha preserve-style tagine of lamb, ras el hanout, honey, raisins, and almonds.
Ingredients
What you’ll need
- 4 lb/1.8 kg lamb neck, shoulder, or shanks
- 2 tsp salt
- 2 tbsp ras el hanout
- 1 tsp ginger
- 1 tsp turmeric
- 1/2 tsp black pepper
- Pinch saffron
- 3 tbsp butter or smen
- 2 onions, grated
- 2 cinnamon sticks
- 3 cups/710 ml water
- 1 1/2 cups/225 g raisins, soaked 15 minutes
- 1/2 cup/170 g honey
- 1 tsp ground cinnamon
- 1 cup/140 g fried or toasted almonds
- 2 tbsp sesame seeds, toasted
Method
How it comes together

Coat lamb with salt and spices. Brown lightly in butter, then add onions, cinnamon sticks, and water.

Cover and simmer until nearly tender, 1 3/4-2 1/2 hours depending on the cut.

Add raisins, honey, and ground cinnamon. Cook uncovered over low heat, turning the lamb carefully, until the sauce becomes thick, dark, and lacquered, 25-40 minutes.

Garnish with almonds and sesame.
Accuracy note
Mrouzia should balance spice and sweetness and historically kept well because its sauce was intensely reduced; modern versions still require refrigeration.
