  • 1 lb/450 g dried cannellini or navy beans, soaked overnight
  • 3 tbsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes, 14 oz/400 g
  • 2 tsp paprika
  • 1 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne
  • 1 1/2 tsp salt, plus more to taste
  • 6 cups/1.4 L water
  • 1/3 cup chopped parsley and cilantro
  • 1 tbsp lemon juice

Method

How it comes together

    Drain beans. Soften onion in oil, add garlic, tomato paste, tomatoes, and spices, and cook 5 minutes.

    Add beans and water. Bring to a boil, skim, then simmer partially covered until creamy-tender, 60-90 minutes. Add water if necessary.

    Salt fully once beans begin to soften. Stir in herbs for the final 10 minutes.

    Adjust with lemon and olive oil. Serve with bread.

Accuracy note

Dried beans give the best broth. Canned beans can be substituted and simmered in the sauce for about 25 minutes.
