Fasolia Green Bean Stew
Egypt and the eastern Arab Mediterranean; green beans braised in tomato, with or without beef or lamb.
Ingredients
What you’ll need
- 1 1/2 lb/680 g beef chuck or lamb shoulder, cubed, optional
- 2 tbsp ghee or olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1 can crushed tomatoes, 28 oz/800 g
- 1 tsp ground coriander
- 1/2 tsp allspice
- 1/2 tsp black pepper
- 1 1/2 tsp salt
- 2 cups/475 ml stock or water
- 1 1/2 lb/680 g green beans, trimmed and cut
- Chopped cilantro
Method
How it comes together

If using meat, brown it in ghee. Add onion and cook until soft; add garlic, tomato paste, and spices.

Add tomatoes and stock. Cover and simmer until meat is nearly tender, about 60 minutes.

Add green beans and cook partially covered until tender but intact, 25-35 minutes. For a vegetarian stew, begin with the onions and simmer beans in the tomato sauce for 35-45 minutes.

Adjust salt and finish with cilantro.
Accuracy note
The sauce should cling to the beans rather than resemble tomato soup. Frozen green beans need less cooking.
