Ingredients

What you’ll need

  • 1 1/2 lb/680 g beef chuck or lamb shoulder, cubed, optional
  • 2 tbsp ghee or olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes, 28 oz/800 g
  • 1 tsp ground coriander
  • 1/2 tsp allspice
  • 1/2 tsp black pepper
  • 1 1/2 tsp salt
  • 2 cups/475 ml stock or water
  • 1 1/2 lb/680 g green beans, trimmed and cut
  • Chopped cilantro

Method

How it comes together

  1. 1

If using meat, brown it in ghee. Add onion and cook until soft; add garlic, tomato paste, and spices.

  2. 2

Add tomatoes and stock. Cover and simmer until meat is nearly tender, about 60 minutes.

  3. 3

Add green beans and cook partially covered until tender but intact, 25-35 minutes. For a vegetarian stew, begin with the onions and simmer beans in the tomato sauce for 35-45 minutes.

  4. 4

Adjust salt and finish with cilantro.

Accuracy note

The sauce should cling to the beans rather than resemble tomato soup. Frozen green beans need less cooking.
