Artichoke & Pea Tagine
Morocco; spring tagine of artichoke bottoms and peas, often with lamb or beef but equally coherent as a vegetable dish.
Ingredients
What you’ll need
- 1 1/2 lb/680 g lamb or beef cubes, optional
- 3 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ginger
- 1/2 tsp turmeric
- Pinch saffron
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chopped parsley and cilantro
- 2 1/2 cups/600 ml water
- 8 artichoke bottoms, fresh or frozen
- 2 cups/280 g peas
- 1/2 preserved lemon rind, sliced
- 1 tbsp lemon juice
Method
How it comes together

If using meat, brown it in oil. Add onion, garlic, spices, herbs, and water and simmer until nearly tender, 60-75 minutes. For vegetarian preparation, simmer the aromatics with 2 cups vegetable stock for 20 minutes.

Add artichoke bottoms and cook until tender, 15-25 minutes depending on type.

Add peas, preserved lemon, and lemon juice; cook 8-10 minutes more.

Reduce sauce gently and adjust salt.
Accuracy note
Frozen artichoke bottoms are a more accurate substitute than canned marinated hearts, which are acidic and texturally different.
