Bakoula Mallow Stew
Morocco. Despite the supplied title, bakoula is normally served as a cooked mallow or mixed-greens salad, not a liquid stew. The corrected preparation follows that tradition.

What you’ll need
- 2 lb/900 g cleaned common mallow leaves, or a mix of spinach and chard
- 1/2 cup chopped parsley and cilantro
- 5 garlic cloves, grated
- 2 tsp paprika
- 1 1/2 tsp cumin
- 1/4 tsp cayenne
- 1 tsp salt
- 3 tbsp olive oil
- 1/2 preserved lemon rind, finely chopped
- 1/3 cup olives
- 2 tbsp lemon juice
Method
How it comes together

Positively identify and wash mallow repeatedly. Steam or cook it with only the clinging water until tender, 15-20 minutes. Drain and chop.

Put greens, herbs, garlic, paprika, cumin, cayenne, salt, and oil in a skillet.

Cook over medium-low heat, stirring and mashing, until moisture evaporates and the mixture becomes cohesive, 15-20 minutes.

Stir in preserved lemon, olives, and lemon juice. Serve warm or at room temperature.
Accuracy note
Never forage mallow unless identification and growing conditions are certain. Spinach-chard is the safest accessible substitute, though less mucilaginous.
