Chicken with Almonds & Eggs

- 1 whole chicken, 4 lb/1.8 kg, cut into pieces
- 2 tsp salt
- 1 tsp ginger
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- Pinch saffron
- 3 tbsp butter and olive oil combined
- 3 onions, finely chopped
- 4 garlic cloves, grated
- 1/2 cup chopped parsley and cilantro
- 1 1/2 cups/355 ml water
- 1 cup/140 g blanched almonds
- Oil for frying almonds
- 4 hard-cooked eggs, quartered
- 1/2 tsp cinnamon, optional
Method
How it comes together

Season chicken. Brown lightly in butter-oil; add onions, garlic, herbs, and water.

Cover and simmer until chicken reaches 165°F/74°C, 35-50 minutes. Remove chicken and reduce onions to a thick sauce.

Fry almonds at 325°F/165°C until pale gold; drain immediately. Brown chicken briefly under the broiler if desired.

Arrange chicken with onion sauce, eggs, and almonds. Dust very lightly with cinnamon only if customary in the intended household style.
