Marqa Hlowa Sweet Stew
Tunisia and Algeria; literally a “sweet sauce/stew,” typically meat with prunes, raisins, apricots, and nuts. Formulas differ by city and holiday.
Ingredients
What you’ll need
- 2 lb/900 g lamb or beef, in large cubes
- 2 tbsp butter or ghee
- 1 onion, grated
- 1 cinnamon stick
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1 tsp salt
- 2 cups/475 ml water
- 8 oz/225 g prunes
- 4 oz/115 g dried apricots
- 1/2 cup/75 g raisins
- 1/4 cup/85 g honey or sugar, to taste
- 1 tbsp orange blossom water
- 1/2 cup toasted almonds
Method
How it comes together

Brown meat in butter. Add onion, cinnamon, turmeric, pepper, salt, and water. Cover and simmer until tender, 75-100 minutes.

Add prunes, apricots, raisins, and honey. Simmer uncovered until fruit is plump and sauce syrupy, 15-25 minutes.

Remove from heat and add orange blossom water.

Garnish with almonds.
Accuracy note
This should be sweet but still taste of meat and spice; add honey gradually because dried-fruit sweetness varies.
