Squid & Chickpea Marqa
Tunisia; tomato-harissa marqa with squid and chickpeas, representative of coastal home cooking.
Ingredients
What you’ll need
- 2 lb/900 g cleaned squid, bodies cut into rings and tentacles separated
- 3 tbsp olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1-2 tbsp harissa
- 1 tsp tabil
- 1 tsp paprika
- 1/2 tsp caraway
- 1 1/2 tsp salt
- 3 cups/710 ml water
- 2 cups/330 g cooked chickpeas
- 2 potatoes, cut into chunks, optional
- 2 tbsp chopped parsley
- Lemon wedges
Method
How it comes together

Cook onion in oil until soft. Add garlic, tomato paste, harissa, tabil, paprika, and caraway and fry 2 minutes.

Add water, chickpeas, and potatoes and simmer 15 minutes.

Add squid. Either cook very briefly, 3-4 minutes, for a lighter stew, or simmer gently 35-45 minutes until tender; avoid the rubbery middle interval.

Adjust salt and finish with parsley and lemon.
Accuracy note
Long-simmered squid is common in marqa; it becomes tender again after its initial tightening phase.
