Goat Tagine with Figs
A plausible Moroccan and Maghrebi regional combination rather than one nationally standardized recipe; slow-braised goat is paired here with dried figs and warm spices.

What you’ll need
- 3 lb/1.35 kg bone-in goat shoulder or stew pieces
- 2 tsp salt
- 1 tsp ginger
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 1/2 tsp cinnamon
- Pinch saffron
- 3 tbsp olive oil
- 2 onions, chopped
- 4 garlic cloves, minced
- 3 cups/710 ml water
- 12 oz/340 g dried figs, stems removed
- 2 tbsp honey, optional
- 1 tbsp lemon juice
- 1/2 cup toasted almonds
Method
How it comes together

Season goat with salt and spices. Brown in oil; add onions, garlic, and water.

Cover and braise at 325°F/165°C or a bare simmer until almost tender, 1 3/4-2 1/2 hours.

Soak figs in hot water 15 minutes. Add to the pot with honey and cook uncovered until goat is fully tender and sauce is glossy, 20-30 minutes.

Balance with lemon juice and garnish with almonds.
Accuracy note
Goat may require longer than lamb. The dish is best treated as a carefully labeled regional-style adaptation, not presented as a singular canonical Moroccan tagine.
