Mina de Matza

A savory Sephardic Passover matzo pie (lasagna), where matzo sheets are soaked in warm water to soften, layered with spinach, feta, parmesan, and eggs, and baked golden-brown.

  • 6 sheets of matzo
  • 2 lbs baby spinach (wilted, drained)
  • 1 cup crumbled feta cheese
  • 1/2 cup grated parmesan
  • 3 eggs (beaten)
  • 1/4 tsp ground nutmeg
  • salt and pepper
  • 2 tbsp olive oil

Method

How it comes together

    Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.

    Soak matzo sheets in a bowl of warm water for 1 minute until pliable but not soggy. Pat dry.

    Combine chopped spinach, feta, parmesan, beaten eggs, nutmeg, salt, and pepper in a bowl.

    Place 2 sheets of matzo at the bottom of the baking dish. Spread half of the spinach mixture over. Repeat with another layer of matzo and remaining mixture. Top with the final 2 matzo sheets.

    Brush the top matzo sheets with olive oil. Bake at 375°F (190°C) for 35 minutes until the crust is golden-brown and crispy.

Accuracy note

Mina is a Sephardic Passover form with many regional fillings; it should not be claimed as exclusively North African.

Chef’s note

Soaking the matzo just enough to make them pliable is the secret to a perfect pastry-like texture.
