  • 1 lb dried black-eyed peas (soaked overnight)
  • 1 can tomato puree
  • 1 onion (grated)
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp paprika
  • ginger
  • turmeric
  • salt
  • 3 tbsp olive oil

Method

How it comes together

    Sauté grated onion and garlic in olive oil in a pot over medium heat (350°F / 175°C) for 5 minutes.

    Add tomato puree, soaked black-eyed peas, cumin, paprika, ginger, turmeric, salt, and 4 cups fresh water. Bring to a boil.

    Cover and simmer on low (190°F / 88°C) for 45 minutes until the peas are soft, tender, and the sauce is thick. Serve hot.

Accuracy note

“Lubia/loubia” can mean different beans in different Arabic dialects; this title specifically calls for black-eyed peas.

Chef’s note

Black-eyed peas cook faster than white beans and do not require long boiling before simmering.
