  • 4 cups stale bread (crusts removed, cubed)
  • 1 cup milk
  • 1 egg
  • 1/2 cup crumbled feta or grated cheese
  • 1/4 tsp nutmeg

  • 1.5 lbs chicken thighs
  • 1 onion
  • 1 can chickpeas
  • cinnamon stick
  • butter
  • salt

Method

How it comes together

    Cook chicken and minced onion in butter in a pot over medium heat (350°F / 175°C) for 10 minutes. Add chickpeas, cinnamon stick, salt, and 2 cups water. Cover and simmer on medium-low for 35 minutes until chicken is tender.

    Soak stale bread in milk for 10 minutes, squeeze out all excess milk. Mash bread with cheese, egg, nutmeg, and salt. Shape into plum-sized balls and flatten slightly.

    Deep fry bread croquettes in hot oil at 350°F (175°C) for 3 minutes until golden-brown and crispy.

    Place warm croquettes on a platter, top with braised chicken, and drench with the cinnamon-chickpea sauce.
