Ingredients

What you’ll need

  • 4 cups flour
  • 2 tsp yeast
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup soft butter
  • 1/2 cup warm milk
  • 1/4 cup orange blossom water
  • grated zest of 1 orange
  • 1 tbsp aniseed
  • egg wash
  • pearl sugar for topping

Method

How it comes together

  1. 1

Whisk yeast, 1 tbsp sugar, and warm milk. Let stand for 5 minutes.

  2. 2

Combine flour, remaining sugar, eggs, orange blossom water, orange zest, aniseed, and yeast mixture in a bowl. Knead for 10 minutes, adding soft butter in stages, until smooth and elastic.

  3. 3

Let rise covered in a warm place for 2 hours until doubled.

  4. 4

Shape dough into a round dome-shaped loaf. Place on a baking sheet, cover, and let rise a second time for 1 hour.

  5. 5

Slash the top with an "X," brush with egg wash, and sprinkle generously with pearl sugar. Bake at 350°F (175°C) for 25-30 minutes until golden-brown and fluffy.

Accuracy note

Mouna’s cultural ownership is shared and historically layered; it should not be reduced to a generic brioche or assigned exclusively to one religious community.

Chef’s note

Adding the butter slowly in stages allows the gluten to develop fully, yielding a super soft crumb.
