  • 1 lb ground beef
  • 1 onion (diced)
  • 2 cloves garlic
  • 1/4 cup pine nuts (toasted)
  • 1/4 cup raisins
  • 2 hard-boiled eggs (chopped)
  • 1 tsp cumin
  • 1/2 tsp allspice
  • salt
  • 1 pack puff pastry or phyllo dough
  • egg wash

Method

How it comes together

    Sauté ground beef and diced onion in olive oil over medium-high heat (350°F / 175°C) for 10 minutes until meat is cooked.

    Stir in minced garlic, toasted pine nuts, raisins, chopped hard-boiled eggs, cumin, allspice, salt, and pepper. Let cool.

    Line a pie pan with puff pastry. Fill with the spiced beef mixture. Top with another layer of pastry, sealing and crimping the edges.

    Brush with egg wash. Bake at 375°F (190°C) for 30 minutes until the pastry is golden-brown and crispy.

Accuracy note

Because “pastel de carne” is a generic Ladino/Spanish descriptor, this formula is explicitly a representative Sephardic pie rather than a unique canonical dish.

Chef’s note

Toast the pine nuts in a dry pan until fragrant before folding them into the beef to enhance their nutty flavor.
