Ingredients

What you’ll need

  • Patties
  • 1.5 lbs cod/halibut fillets (minced)
  • 2 cloves garlic
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped parsley/cilantro
  • cumin
  • salt
  • Sauce
  • 1 can tomato puree
  • 1 bell pepper (sliced)
  • 3 cloves garlic
  • cumin
  • paprika
  • 2 tbsp olive oil

Method

How it comes together

  1. 1

Pulse fish fillets, minced garlic, egg, breadcrumbs, chopped herbs, cumin, and salt in a food processor until minced but not pureed. Shape into 2-inch patties.

  2. 2

Heat olive oil in a skillet. Fry fish patties at 350°F (175°C) for 2 minutes per side until lightly golden. Set aside.

  3. 3

Sauté sliced bell pepper and garlic in olive oil in a wide pot. Add tomato puree, cumin, paprika, salt, and 1 cup water. Simmer on medium for 10 minutes.

  4. 4

Slide fried patties into the sauce, cover, and simmer on low for 15 minutes.

Accuracy note

Fish species and spice mixtures vary by diaspora community; coarse chopping keeps the cakes moist.

Chef’s note

Soak fish fillets in a bowl of lemon water for 10 minutes before mincing to keep the patties smelling fresh and clean.
