  • 2 lbs beef chuck (cubed)
  • 4 large potatoes (peeled and cut into chunks)
  • 1 onion (chopped)
  • 1.5 tsp ginger
  • 1 tsp turmeric
  • saffron threads
  • 2 tbsp sugar
  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil
  • salt

Method

How it comes together

    Sauté beef and onion in olive oil in a large pot over medium-high heat (350°F / 175°C) for 10 minutes. Add ginger, turmeric, saffron, salt, and 4 cups water.

    Cover and simmer on medium-low (190°F / 88°C) for 1 hour and 15 minutes until beef is tender.

    Add potato chunks. Simmer covered for 20 minutes until potatoes are soft.

    Stir in sugar and fresh lemon juice. Cook uncovered on low for 10 minutes until the starch and sugar thicken the broth into a sweet-sour glaze.
