  • 2 lbs beef shanks
  • 1 cup chickpeas
  • potatoes
  • head of garlic
  • eggs in shell
  • water
  • Kouclas
  • 1 cup fine semolina
  • 1/4 cup melted butter (or smen)
  • 1 egg
  • 2 cloves garlic
  • 1/4 cup minced parsley
  • cumin
  • salt

Method

How it comes together

    Layer chickpeas, potatoes, whole unpeeled garlic, and beef shanks at the bottom of a large pot.

    Whisk semolina, butter, egg, minced garlic, parsley, cumin, and salt in a bowl to form a tight dough. Shape into oblong dumplings (Kouclas). Wrap dumplings in parchment paper.

    Place the eggs in shell and wrapped Kouclas on top of the meat. Submerge everything in water.

    Cover tightly and cook slow and low at 200°F (95°C) for 18 to 24 hours overnight.

Accuracy note

Kouclas vary greatly: bread, rice, wheat, and meat versions all exist. Wrapping protects a soft dumpling during overnight cooking.

Chef’s note

Wrapping the Kouclas in parchment paper prevents them from dissolving into the broth during the overnight cook.
