Fritada de Espinaca
A rustic Sephardic spinach and feta frittata or baked casserole, seasoned with garlic and baked until set.
Ingredients
What you’ll need
- 1 lb fresh spinach (finely chopped)
- 1 leek (white part, sliced)
- 6 eggs
- 1 cup crumbled feta cheese
- 1/2 cup grated parmesan
- 2 tbsp olive oil
- salt and pepper
Method
How it comes together

Sauté sliced leeks in olive oil over medium heat (350°F / 175°C) for 5 minutes until soft. Stir in chopped spinach and cook for 3 minutes until wilted. Drain all excess liquid.

In a bowl, whisk eggs, feta, parmesan, salt, and pepper. Fold in the drained spinach and leeks.

Pour the mixture into a greased baking dish or skillet.

Bake at 375°F (190°C) for 25 minutes until set, puffed, and golden-brown.
Accuracy note
Removing spinach water is essential; a wet mixture will not set cleanly.
Chef’s note
Drain the wilted spinach extremely well to keep the casserole light and prevent it from becoming watery.
