  • 3 cups flour
  • 1/2 tsp baking powder
  • 1 egg yolk
  • 1/4 cup olive oil
  • 1/2 cup warm water
  • salt
  • Syrup
  • 1 cup honey
  • 1/4 cup water
  • 1 tbsp lemon juice

Method

How it comes together

    Knead flour, baking powder, egg yolk, olive oil, salt, and water for 10 minutes. Rest covered for 1 hour.

    Roll out dough paper-thin (using pasta setting 7) and cut into 1-inch by 12-inch strips.

    Heat deep frying oil to 350°F (175°C). Spear the end of a strip with a fork. Place in hot oil, and roll the strip carefully onto the fork, letting each layer puff slightly as it fries to form a rosebud shape.

    Drain on paper towels, then immediately dip in warm honey syrup.

Accuracy note

Vinegar helps limit oil absorption and encourages crispness; the pastry should remain delicate and light-colored.

Chef’s note

Squeeze each rosebud slightly as it cools to allow the honey syrup to saturate the layers.
