Bomba Rice Timbale

  • 2 cups basmati rice (cooked with turmeric and saffron)
  • 1/2 lb ground beef
  • 1 onion (chopped)
  • 1/2 cup peas and carrots
  • 1 egg (beaten)
  • 1/4 tsp cinnamon
  • salt and pepper
  • olive oil

Method

How it comes together

    Sauté ground beef, chopped onion, peas, and carrots in olive oil over medium-high heat (350°F / 175°C) for 10 minutes. Season with cinnamon, salt, and pepper. Let cool.

    Whisk cooked saffron rice with beaten egg (this acts as the binder).

    Pack half of the saffron rice into a greased bundt or ring mould. Layer the cooked ground beef and vegetables over. Top with the remaining saffron rice, pressing down firmly.

    Bake at 350°F (175°C) for 25 minutes. Let cool for 5 minutes, then invert carefully onto a large platter.
