Traditional Algerian white bean stew slow-simmered in a fiery garlic, cumin, and red chili pepper dersa paste.

What you’ll need

  • 1 lb dried white beans (soaked overnight)
  • 6 cloves garlic
  • 1 tbsp sweet paprika
  • 1/2 tsp cayenne
  • 1.5 tsp ground cumin
  • 1 tsp salt
  • 3 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 fresh grated tomato
  • 6 cups water
  • 1 tbsp white vinegar
  • fresh parsley

Method

How it comes together

    Mash garlic, paprika, cayenne, cumin, and 1/2 tsp salt in a mortar and pestle to form a smooth dersa paste.

    Fry dersa paste in olive oil in a pot over medium-low heat (300°F / 150°C) for 30 seconds (do not burn the garlic).

    Add tomato paste and grated tomato; cook for 3 minutes. Stir in drained white beans and 6 cups water. Bring to a boil.

    Cover and simmer on low (190°F / 88°C) for 60-90 minutes until beans are creamy-tender. Stir in remaining salt once beans soften.

    Cook uncovered for 10 minutes to reduce. Finish with a drizzle of vinegar and chopped parsley.

Accuracy note

This Algerian version foregrounds dersa and may contain little or no onion.

Chef’s note

Authentic Algerian Loubia has little or no onion, foregrounding the bold garlic-cumin dersa instead.
