  • 1 lb fresh Terfess (desert truffles)
  • 1 lb beef chuck (cubed)
  • 1 onion (chopped)
  • 3 cloves garlic
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 3 tbsp ghee (or olive oil)
  • water

Method

How it comes together

    Clean truffles (Critical Step): Soak Terfess in several changes of cold water, scrubbing thoroughly with a soft brush to remove all desert sand from their crevices. Slice into 1/2-inch thick pieces.

    Sauté chopped onion and beef cubes in ghee in a pot over medium-high heat (350°F / 175°C) for 10 minutes until browned.

    Add turmeric, salt, pepper, minced garlic, and water to cover. Simmer covered on low (190°F / 88°C) for 1.5 hours until beef is tender.

    Add sliced truffles. Cover and simmer on low for an additional 25-30 minutes until truffles are tender but hold their shape. Serve hot over rice.

Accuracy note

Use commercially identified edible desert truffles. Wild fungi should never be eaten based solely on appearance or a recipe description.

Chef’s note

Terfess grow underground in desert sands; cleaning them meticulously is vital to avoid any sandy grit in your stew.
