  • 1.5 lbs whitefish fillets (minced)
  • 2 cloves garlic
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped parsley

  • 1 can tomato puree
  • 1 onion (chopped)
  • 3 cloves garlic
  • cumin
  • paprika
  • 1/2 cup green olives
  • 2 tbsp olive oil

Method

How it comes together

    Pulse fish fillets, minced garlic, egg, breadcrumbs, chopped parsley, cumin, and salt in a food processor until finely minced. Shape into small 1.5-inch balls.

    Sauté chopped onion and garlic in olive oil in a pot over medium heat (350°F / 175°C) for 5 minutes.

    Add tomato puree, cumin, paprika, salt, and 1.5 cups water. Simmer on medium for 10 minutes.

    Add fish balls carefully, cover, and simmer on low (190°F / 88°C) for 12-15 minutes until firm. Stir in green olives, cook for 5 more minutes.

Accuracy note

Gentle poaching preserves a tender texture; vigorous boiling breaks delicate fish balls.

Chef’s note

Adding a splash of lemon juice to the fish mix cuts through the oil and fishiness, keeping the balls light.
