Harissa Paste
The quintessential fiery North African red chili paste blended with garlic, salt, olive oil, and roasted spices.
Ingredients
What you’ll need
- 1/2 lb dried red chilies (baklouti or guajillo)
- 6 cloves garlic
- 1 tbsp cumin seeds
- 1 tbsp coriander seeds
- 1.5 tsp caraway seeds
- 1 tsp salt
- 1/3 cup extra virgin olive oil
Method
How it comes together

De-stem dried chilies, slice open, and discard seeds. Soak in boiling water for 30 minutes until soft. Drain thoroughly.

Toast cumin, coriander, and caraway seeds in a dry pan over medium heat (350°F / 175°C) for 2 minutes. Grind finely.

Place drained chilies, minced garlic, ground spices, and salt in a food processor. Blend to a paste.

Drizzle in olive oil slowly while pulsing until emulsified and glossy. Store in a sterilized jar topped with a thin layer of olive oil.
Accuracy note
A layer of oil improves texture and limits surface drying but does not make homemade harissa shelf-stable.
Chef’s note
Adding a layer of olive oil on top after each use preserves the harissa for up to a month in the fridge.
