Preserved Lemons
Foundational Moroccan condiment of lemons slow-cured in their own juice and coarse salt until tender, aromatic, and glossy.
Ingredients
What you’ll need
- 8 fresh organic lemons (scrubbed)
- 1/2 cup coarse sea salt
- fresh lemon juice (as needed)
Method
How it comes together

Slice each lemon lengthwise from the top into quarters, but do not cut all the way through (leave connected at the stem end).

Pack 1 tbsp of coarse salt inside each open lemon.

Place lemons inside a sterilized wide-mouth glass jar, pressing down firmly so they release their juices.

Pour in extra fresh lemon juice if needed to fully submerge the lemons. Seal tightly.

Store in a cool, dark cupboard for 4-5 weeks, shaking the jar occasionally. Once cured, the rinds will be soft, glossy, and intensely aromatic.
Accuracy note
Salt quantity and continuous submersion are essential. This is a traditional cured product, not a reduced-salt quick pickle.
Chef’s note
Always rinse preserved lemons in cold water before chopping to remove excess salt cure.
