Smen Aged Butter

Traditional Moroccan fermented, aged clarified butter with a pungent cheese-like aroma, prized for depth in tagines and couscous.

What you’ll need

  • 1 lb unsalted butter
  • 2 tbsp coarse salt
  • 2 tbsp dried wild oregano
  • water

Method

How it comes together

    Simmer dried oregano in 2 cups water for 10 minutes. Strain and let cool completely.

    Melt butter in a saucepan over low heat, skimming off white foam, until clarified (ghee). Let cool.

    Knead the clarified butter with coarse salt and cooled oregano water in a bowl for 5 minutes, washing out the milk solids. Drain off water.

    Pack salted butter tightly into a sterilized glass jar. Seal tightly, wrap in foil to block light, and store in a cool, dark cellar for at least 3 months (or up to years) to age.

Accuracy note

Traditional smen may be buried or held for months or years, but reproducing ambient fermentation without validated controls can be hazardous. This refrigerator version develops milder aged flavor.

Chef’s note

Aging smen develops a sharp, bleu-cheese-like complexity that is highly traditional.
