Zhug Green Chili
Robust Middle Eastern hot green chili paste blended with fresh cilantro, garlic, cumin, and cardamom.
Ingredients
What you’ll need
- 8 hot green serrano/jalapeño chilies
- 1 cup fresh cilantro
- 1/2 cup fresh parsley
- 4 cloves garlic
- 1 tsp ground cumin
- 1/2 tsp ground cardamom
- 1/2 tsp salt
- 3 tbsp olive oil
- 1 tbsp lemon juice
Method
How it comes together

Coarsely chop chilies (discard seeds for less heat).

Place chilies, cilantro, parsley, garlic, cumin, cardamom, and salt in a food processor. Pulse until finely minced.

Drizzle in olive oil and lemon juice, pulsing to form a coarse, vibrant green paste. Store in a jar.
Accuracy note
Fresh garlic and herbs in oil are not safe for room-temperature storage.
