What you’ll need

  • 2 tbsp black peppercorns
  • 2 tbsp coriander seeds
  • 2 tbsp sweet paprika
  • 1 tbsp cardamom seeds
  • 1 tbsp whole cloves
  • 1 tbsp cinnamon powder
  • 1 tsp ground nutmeg
  • 1 tbsp cumin seeds

Method

How it comes together

    Toast whole black peppercorns, coriander seeds, cardamom seeds, cloves, and cumin seeds in a dry pan over medium heat (350°F / 175°C) for 2 minutes until highly aromatic.

    Let cool completely. Grind the toasted spices in a high-powered spice grinder to a very fine powder.

    Sift in sweet paprika, ground cinnamon, and nutmeg. Whisk until uniform.

    Store in an airtight container in a dark cupboard. Use within 6 months.

Accuracy note

This all-purpose blend is distinct from Moroccan ras el hanout and Ethiopian berbere.

Chef’s note

Freshly toasting the whole seeds before grinding releases volatile oils that pre-ground store-bought packages lack.
