What you’ll need

  • 1 cup fresh cilantro (leaves and tender stems, finely chopped)
  • 1 cup fresh flat-leaf parsley (finely chopped)
  • 4 cloves garlic (minced)
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1/2 tsp ginger powder
  • 3 tbsp fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • 1 tsp salt

Method

How it comes together

    Thoroughly wash and dry herbs. Finely chop parsley and cilantro with a knife (do not food process).

    Whisk the chopped herbs, minced garlic, ground cumin, coriander, ginger, and salt in a bowl.

    Slowly pour in fresh lemon juice and extra virgin olive oil, whisking constantly until emulsified. Let sit for 15 minutes before marinating fish.

Accuracy note

“Verte” is a descriptive French label; green chermoula is a regional style, not a separate universally codified sauce.

Chef’s note

Hand-chopping the fresh herbs keeps the green juices intact, preventing the marinade from turning bitter.
