Harissa Rose Petal
Signature Tunisian rose-petal-infused harissa paste, blending dried red chilies, garlic, and caraway with fragrant crushed pink rose petals.
Ingredients
What you’ll need
- 1/2 lb dried red chilies (baklouti)
- 6 cloves garlic
- 1 tbsp cumin
- 1 tbsp coriander
- 1.5 tsp caraway
- 3 tbsp dried pink organic rose petals (crushed)
- 1 tbsp rosewater
- 1/3 cup olive oil
- 1 tsp salt
Method
How it comes together

Soak dried chilies in boiling water for 30 minutes. Drain thoroughly.

Dry-toast cumin, coriander, and caraway seeds at 350°F (175°C) for 2 minutes, then grind.

Blend drained chilies, garlic, ground spices, crushed rose petals, rosewater, and salt in a food processor to a smooth paste.

Drizzle in olive oil slowly while pulsing until emulsified and glossy. Store in a glass jar topped with olive oil.
Accuracy note
Rose should perfume rather than make the paste taste soapy. This is a contemporary variation and is labeled accordingly.
Chef’s note
Sweet culinary rosewater and rose petals add a delicate floral note that beautifully softens the sharp chili heat.
