Ingredients

What you’ll need

  • 1/2 cup raw white sesame seeds
  • 2 tbsp dried organic pink rose petals
  • 1/2 tsp coarse sea salt
  • 1 tsp turbinado sugar

Method

How it comes together

  1. 1

Toast the white sesame seeds in a dry skillet over medium heat (350°F / 175°C) for 2-3 minutes, shaking the pan constantly, until golden and nutty. Let cool completely.

  2. 2

Gently crush the dried rose petals in your hands or grind briefly in a spice grinder to form coarse pink flakes.

  3. 3

In a bowl, toss the toasted sesame seeds, crushed rose petals, sea salt, and turbinado sugar.

  4. 4

Store in an airtight jar in a dark cupboard. Use to sprinkle over pastries, yogurt, or fresh couscous.

Accuracy note

Food-grade culinary roses must be used; florist flowers may carry pesticides and are unsuitable.
